Recipe: (Pasta Sauce)

  • 2 lbs ripe tomatoes
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 tbsp fresh chopped basil
  • 1/2 tsp salt


Directions:

  1. Cut tomatoes in half and squeeze or scoop out the seeds and jelly. Run the tomatoes over the holes of a box grater or a mandolin to pulp the flesh. Discard skins. Alternatively, boil tomatoes whole for 1 minute then drop in ice water to peel the skin easily. Remove skins, seeds, and jelly and blend in a food processor.
  2. Put tomato pulp in a saucepan on medium heat. Add olive oil, garlic, salt, tomato paste, and basil. Bring to a boil and then reduce to a gentle simmer.
  3. Allow to simmer for about 10 minutes or until the sauce reduces to about half. Taste and adjust salt if needed.

Recipe: (Beyond Beef)

Yields 2-4 Servings

  • 1 lb Beyond Meat Beyond Beef
  • 1 medium sweet onion
  • 2 tbsp olive oil
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 1/2 tsp granulated white sugar


Directions:

  1. Peel and dice sweet onion.
  2. Heat a frying pan on medium heat and add 1 tbsp olive oil to coat the pan. Add diced onion to the pan and cook until the onion becomes golden brown. This should take about 5 minutes.
  3. Add in the Beyond Beef and crumble it in the pan. Add 1 tbsp of olive oil, black pepper, and salt. Stir occasionally until the meat begins to brown. This should take about 10 minutes.
  4. Add sugar and stir.
  5. Pour pasta sauce over the Beyond Beef and onion mixture and incorporate. Cook together for 2 minutes before pouring over your pasta or spaghetti squash. Spaghetti Squash Recipe
