Creamy Mashed Cauliflower with Garlic and Chives
Try this very low calorie version of garlic mashed potatoes without all the carbs and butter.
Recipe:
- 1 cauliflower head
- 3 cloves garlic
- 1 tsp olive oil
- 2 tbsp 2-5% fat plain Greek yogurt
- 1 tbsp fresh chives
- 1/2 tsp ground black pepper
- 1/2 tsp salt
Directions:
- Wash cauliflower and cut into florets.
- Add cauliflower florets to pressure cooker or pot on stovetop, using a steaming rack to raise it off the bottom, and with at least 1 cup water.
- Cook for 3 minutes in pressure cooker or steam for about 8 minutes on stovetop.
- Once done, discard liquid and transfer cauliflower florets to a mixing bowl.
- Finely chop garlic and sauté with the olive oil on medium for about a minute, or until it begins to turn golden brown.
- Transfer olive oil and garlic into the mixing bowl and combine with cauliflower with a potato masher or fork.
- Combine in Greek yogurt and chives.
