Honey Dijon Baked Salmon

Healthy and convenient, this sweet and savory dinner is ready in about 30 minutes.


Recipe:

  • 2 6-8oz filets of salmon
  • 2 tbsp honey
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 2 tbsp panko breadcrumbs
  • 1 tbsp chopped parsley
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper


Directions:

  1. Preheat oven to 400 degrees F.
  2. Combine olive oil, honey, and Dijon mustard in a bowl and stir together.
  3. Pat dry salmon filets and sprinkle with salt and pepper, then coat with honey Dijon mixture. Place on non-stick baking sheet.
  4. Sprinkle panko and parsley on top of filets.
  5. Bake salmon in oven for 15-18 minutes or until it easily flakes with a fork.
