Original 10x Flipped Chicken Thighs

10x or “Ten Times” flipped cast iron chicken thighs on broccoli and zucchini slaw

Chicken thighs have so much flavor, yet are often overlooked because they’re perceived as being less healthy than chicken breasts. While chicken thighs do have more fat than chicken breasts, it’s not all “bad fat.” Chicken thighs with skin have about twice the fat as chicken breasts, but they’re also high in mono- and polyunsaturated fats, which are suggested as heart-healthy.

Cooking chicken is very simple with an instant-read thermometer. I consider it mandatory to make sure your chicken reaches the perfect temperature. Chicken is safe to eat at 165 degrees F, but chicken thighs are perfect at 185 degrees F. This recipe is also great on a barbecue, and remember to keep the heat at medium (around 400F) and move the chicken away from flare ups.

Recipe:

  • 1-4 Chicken thighs, bone in and skin on
  • McCormick Grill Mates “Smokehouse Maple” or “Sweet and Smoky” seasoning

Directions:

  1. Heat your cast iron grill pan on medium-low heat and allow it to heat for 2-3 minutes.
  2. Season your chicken thighs very well on both sides.
  3. Place the chicken on your grill pan skin side down for about 5 minutes, or until grill marks are visible.
  4. Flip the chicken and cook skin side up for another 5 minutes.
  5. Continue to flip the chicken every 2 minutes or until the temperate reaches 185 degrees F. This should take about “10 flips” and about 30 minutes total.
  6. Allow the chicken thighs to rest for 2 minutes before serving.
