Panko Crusted Halibut

Panko Crusted Halibut with Roasted Brussels Sprouts

Halibut is a very lean fish, making it an excellent choice for a low fat and high protein meal. It’s a firm fish and very tender when cooked properly. It’s very mild in flavor, making it great for those who do not appreciate more popular fish, such as salmon.

Halibut is also high in Omega-3 polyunsaturated fat, making it heart healthy. Along with the countless other micronutrients such as niacin, selenium, phosphorus, and more, halibut brings a lot to the table for your heart, bones, and metabolism.


Recipe:

  • 2x 6oz filets of Halibut
  • 1/3 cup panko bread crumbs
  • 1 1/2 tbsp olive oil
  • 1 tbsp dried parsley
  • 1/2 tbsp garlic powder


Directions:

  1. Remove halibut from the refrigerator and let it sit for 20 minutes to come up to room temperature. This ensures more even cooking.
  2. Preheat oven to 450 degrees F.
  3. Rinse and dry halibut filets, then evenly coat with a drizzle of about 1/2 tbsp olive oil.
  4. In a bowl, mix panko bread crumbs, dried parsley, and garlic power with 1 tbsp olive oil.
  5. Take the mixture and gently rub it into the top of the halibut filets.
  6. Spray a tin foil lined baking sheet with cooking spray and place the halibut on the tin foil. Place in oven for about 15 minutes or until the fish easily flakes and is no longer opaque. Let it rest for about 2 minutes, then serve.
